Le Battements d'ailes
The planted area has been designed to produce fruit, vegetables, meat and the biomass needed to feed the soil. It is in constant motion, like the surrounding nature. The food garden comprises 3 greenhouses (420 m2 in total) and terraces (2,000 m2) for fruit and vegetable production. There is also a large orchard with hedges, beds of perennials and annuals, copses, shrubbery and paths. Trees and pastures gently shape the landscape. Apple, hazelnut, plum, pear and medlar trees stand side by side with alders, aspens, elms, hornbeams and hazelnuts... They have been a testing ground for various gardeners who have been part of the team... on market gardening activities and the cultivation of aromatic and medicinal plants. They fed the permanent staff and partly supplied the restaurant and store.
